Tofu Guacamole

"The fat from avocados is low in saturated fat but I have lightened it up adding tofu and the result is delicious!"

Serves 4-6
Preparation time: 30 minutes

Ingredients

3 ripe avocados
Juice of 1 lime
Handful chopped fresh cilantro/coriander
8oz tofu
1 small red birds eye chilli
4 spring onions chopped


 

 

Preparation

Place all the ingredients except the spring onions into a food processor and blend too a chunky dip rather than a puree. Mix in the spring onions by hand.

Serve as a dip for chips or on toasted slices of bread as a canapé

Tip

To ripen hard avocados, leave them in a closed paper bag at room temperature for a few days.
