Gazpacho

"This traditional Spanish recipe is a wonderful summer dish."

Serves 4
Preparation time: 10 minutes

Ingredients

Handful chives, fresh
Handful chervil, fresh
Handful parsley, fresh
Handful basil, fresh
Handful marjoram, fresh
1 garlic clove
1 small red chilli
1 red pepper
2 tomatoes, peeled and seeded
Juice of one lemon
1 Onion,
½ a cucumber
Salt
Pepper

Preparation

Chop the herbs and mash thoroughly with the garlic, pepper, tomatoes and lemon juice. Add about three glasses of cold water stock. Finely chop the onion and the cucumber and add to the soup. Season to taste and chill for at least four hours before serving.
